Bacon, Spinach and Parmesan Cheese Frittata

Need a quick brunch idea?  How about a simple weekend breakfast?  Maybe you just have some leftover deli ham and swiss cheese.  Feel free to swap out whatever you have at home.  Here's how you can whip together a 1 pan meal that's sure to impress.

Ingredients:
6 Eggs
1/2 cup of Half and Half (Milk works fine here, too)
A bag of Fresh Spinach (or any other sturdy green)
1 clove of Garlic
6 strips of Bacon
1/4 cup of Parmesan Cheese (yep- that kind you store on the door of your refrigerator)
1 tbsp of Dijon Mustard
Black Pepper
Extra Virgin Olive Oil

Directions:
step 1: heat a couple tbsp of olive oil in a NON STICK, OVEN SAFE pan on LOW heat
**preheat oven to 350 degrees**
step 2: crush, grate, chop (whichever you prefer) garlic.  Add to pan along with spinach.  Stir to wilt leaves completely.
step 3: throw the strips of bacon into the microwave (3 mins or so) for a quick cook (this is of course optional- you can fry or bake if you'd prefer)
step 4: chop cooked bacon into bite sized pieces
step 5: beat eggs in a separate bowl, add half and half (or milk), Parmesan cheese, dijon mustard, pepper and bacon.  Mix together
step 6: is the spinach wilted?  If so, add the entire contents of the bowl to the pan. Turn heat to MED
step 7: let eggs firm up without scrambling by lifting the edges of the egg with a wooden spoon, tilting the pan and allowing the uncooked mixture to run underneath.  Do this a few time until the mixture is about half way cooked.
step 8: place entire pan into the oven for 15 minutes or until firm
step 9: flip the entire frittata over and serve!

Tips:
Go easy on the salt here.  The Parmesan cheese and bacon have plenty of salt for this dish. Print this Recipe
